Chipotle Meatloaf
2 pounds ground chuck
1 cup diced red bell pepper
1 cup finely chopped onion
2 scallions, thinly sliced
2 tablespoons roasted garlic
1 chipotle pepper
1 tablespoon adobo sauce reserved from chipotle can
1tablespoon Worcestershire sauce
3 eggs
1/2 cup bread crumbs
1 teaspoon Rafter L pepper blend
salt and pepper to taste
Mix all of the ingredients in a large bowl and shape to put in dutch oven. Cook at 350° for approx. 1 hr. to 11/4 hr. Add extra coals toward end to brown top. Remove and let stand for 10 to 15 minutes before serving. (yield 8 servings)
Green Chile Hominy
1 cup chopped onion
2 tablespoons butter
1 gallon white hominy – drain and reserve juice
½ cup hominy liquid
1 tablespoon juice from pickled jalapenos
½ lb. shredded cheese
10 slices bacon - fried crisp and chopped (reserve drippings)
1 cup seeded and chopped pablano pepper
2 chopped pickled jalapeno peppers
Fry bacon, remove from pan, chop and set aside. Sauté the onions in bacon drippings and a little butter. Add drained hominy, hominy liquid and jalapeno juice. When heated thoroughly add ¾ of the cheese. When cheese melts add half the peppers, half the bacon and blend well. Top with remaining cheese, bacon and peppers. Bake until cheese on top melts.
Cool Strawberry Stuff
1 yellow cake mix
1 instant vanilla pudding
1 tub cool whip
fresh strawberries, sliced
strawberry glaze
Bake cake according to directions. Let cool. Crumble cake into large bowl. Mix instant pudding and pour over cake. Spread cool whip over pudding and top with strawberries and glaze.Chill until serving time. (yeilds 18 servimgs)
